The Ancho Mulato, or Mulato pepper, is a close relative of the ancho and poblano, distinguished by its darker, nearly black dried skin. Its broad, wrinkled pods deliver a complex smoky flavor with distinctive notes of chocolate and licorice. With mild heat, it is a key ingredient alongside ancho and pasilla in the Mexican mole negro trinity.
