Description
The Chilhuacle Negro is the darkest of the three Oaxacan chilhuacle varieties, its broad pods drying to a near-black, deep brown-black color. With very mild heat, it delivers a rich smoky flavor with notes of chocolate, dried fruit, and licorice. An essential ingredient in Oaxaca's iconic mole negro, it is sourced almost exclusively dried and slow-cooked in the complex sauces central to Oaxacan celebrations.
