Description
The Chilhuacle Rojo is the most widely used of the three Oaxacan chilhuacle varieties, its broad, wrinkled pods drying to a deep red color. With mild heat and a fruity, smoky flavor carrying notes of dried cherry and tobacco, it is the cornerstone of Oaxacan mole rojo and enchiladas. Rarely used fresh, it adds depth and warm color to the rich sauces that define the cuisine of Oaxaca.
