The Chiltepín Texas is the wild Chiltepín found natively in the Big Bend region and Rio Grande Valley of Texas, recognized as the official state native pepper of Texas. Its tiny, round pods ripen to brilliant red with intense, short-lived heat and a fruity flavor. Deeply embedded in Tex-Mex food culture, it is harvested wild and used in local salsas, pickling vinegars, and traditional border cuisine.
