Description
The Española Improved is a New Mexican chile variety developed through selective breeding of traditional Spanish colonial peppers cultivated in the Española Valley of Northern New Mexico. Its long, tapered pods ripen to a rich red with mild, earthy, slightly fruity New Mexican chile flavor ideal for drying and grinding into chile powder. A staple of Northern New Mexican cuisine, it is used in traditional red chile sauces, enchiladas, and posole.
