Description
The Guajíllo is one of Mexico's most important dried chilies, made from the dried Mirasol pepper, with a tough, shiny dark red skin and a distinctive tangy, berry-like flavor with mild heat. Its long, tapered dried pods are a cornerstone of authentic Mexican cooking, used as the base for enchilada sauces, mole, pozole, and birria.
