The Joe E. Parker is a New Mexico-type green chile released by New Mexico State University, named in honor of longtime horticulture department supporter Joe E. Parker. Its long, tapered pods have thick, firm walls with a classic earthy, mild New Mexican chile flavor ideal for roasting, peeling, and stuffing. A reliable commercial and home garden variety widely grown across New Mexico, it is the backbone of green chile stews, enchiladas, and the state's famous green chile cheeseburger.
