Description
The Mirasol is a traditional Mexican chili whose name means 'looking at the sun' referring to its pods that grow pointing upward ripening from green to a bright red with a mild fruity heat and pleasant berry-like tartness. Cultivated primarily in Zacatecas and Durango it is used fresh in salsas and sauces but becomes far more famous when dried and transformed into the Guajillo one of the most widely used dried chiles in Mexican cuisine. Guajillo's deep fruity complexity and earthy finish make it essential in moles enchilada sauces and marinades.
