Description
The Mulato Isleño is a traditional Mexican poblano-type pepper that ripens to a deep chocolate-brown and is primarily used dried where its wrinkled wide pods develop complex flavors of chocolate raisins licorice and tobacco with mild earthy heat. A close cousin of the ancho but darker and richer in flavor it is one of the three key dried chiles used alongside ancho and pasilla to make authentic mole negro and other Oaxacan and Poblano sauces. Its mild heat and deep layered flavor make it indispensable in the rich sauce traditions of central and southern Mexico.
