Description
The NuMex Bailey Piquín is a cultivated piquín-type chili developed at New Mexico State University producing tiny round pods that ripen to bright red with a sharp fruity heat in the 40,000-60,000 SHU range. Named in honor of the Bailey family it retains the concentrated intense flavor of wild piquín peppers while offering improved yield and plant consistency suited to cultivation. Its small fiery pods are used fresh in salsas hot sauces and as a decorative edible container plant.
