Description
The NuMex Las Cruces is a cayenne-type chili developed at New Mexico State University in Las Cruces producing long tapered pods that ripen from green to vivid red with moderate to hot heat and a slightly smoky pungent flavor. Well adapted to the arid Chihuahuan Desert conditions it produces consistently high yields of uniformly shaped pods used fresh in cooking dried in ristras and ground into chili powder. It is a reliable workhorse variety representing the classic flavors of southern New Mexico's chile culture.
