Description
The NuMex Vaquero is a jalapeño-type chili developed at New Mexico State University producing smooth glossy pods with the characteristic corked skin pattern and moderately high heat around 25,000-30,000 SHU at the higher end of the jalapeño spectrum. Its classic smoky jalapeño flavor and firm thick flesh make it excellent for fresh salsas pickling stuffing and smoking into chipotle reflecting the rugged agricultural heritage of New Mexico's chili-growing tradition. Named for the cowboys of the American West it is a reliable high-yielding variety that delivers bold jalapeño character.
