Description
The Piquillo is a celebrated Spanish pepper from Lodosa in the Navarra region of northern Spain producing triangular beak-shaped pods of 7-8 cm that are harvested when fully red then traditionally roasted over wood fires and hand-peeled giving them a distinctive sweet and subtly smoky flavor. Protected by a Denominación de Origen designation that mandates hand-harvesting and traditional fire-roasting Piquillo peppers are a cornerstone of refined Spanish cuisine used whole to stuff with salt cod cream cheese or seafood or sliced in tapas and pintxos. Their sweet concentrated flavor mild heat and silky texture after roasting have made them one of the most prized specialty peppers in European gastronomy.
