Description
Pul Biber is the Turkish term for crushed red chili flakes and describes a moderately spicy style of Capsicum annuum pepper dried semi-dried and coarsely ground into the third most common spice in Turkey after salt and black pepper. The pepper is ripened to a deep burgundy then semi-dried de-seeded and processed to retain natural oils producing moist oily flakes with a sweet fruity raisin-like flavor and mild cumin undertones distinct from the typical Western dried chili. Essential to Turkish cuisine it is sprinkled over kebabs eggs cheeses lahmacun and mezze and its availability has made it a staple of Mediterranean and Middle Eastern cooking worldwide.
