Description
The Pulla also spelled Puya is a dried Mexican chili closely resembling the guajillo but smaller and thinner producing long tapered pods of 7-10 cm with deep crimson skin that develop a fruity sweet aroma and flavor with distinctive licorice and cherry undertones when dried. Often confused with the guajillo the Pulla is slightly hotter with a sharper tangy heat and is used in Mexico as a flavor enhancer in moles salsas marinades and traditional stews where its complex fruity and slightly anise-like character adds distinctive depth.
