The Sandia is a New Mexico heirloom chili developed at New Mexico State University producing long tapered pods that ripen from green to bright red. With mild heat of 1,500-2,500 SHU and an earthy slightly sweet flavor it is a staple of Southwestern cuisine used to make traditional red chili sauces and powder.
