Description
The Tabasco is a Capsicum frutescens chili originating from the Mexican state of Tabasco made world-famous by McIlhenny Company as the key ingredient in Tabasco hot sauce. Its small tapered pods of 3-4 cm ripen to brilliant red with 30,000-50,000 SHU and a characteristic tangy vinegary heat. Unlike most chilies the ripe pods contain a watery juice rather than thick flesh making them ideal for fermented hot sauce production.
