Description
The Urfa Biber (also known as Isot pepper) is a distinctive Turkish chili from the Urfa region of southeastern Turkey. Its long pods are harvested red then sun-dried and sweated in a traditional two-stage process that transforms them to a deep burgundy-black color with a complex smoky earthy flavor carrying notes of chocolate dried fruit and tobacco at 30,000-50,000 SHU. Indispensable in Turkish and Middle Eastern cuisine it is used in kebabs mezes lahmacun and marinades.
